  • Fabricating fish and meat was not always my strongest forte! In fact the first time I handled the whole fish and huge pieces of meat was in 2013 while I was in Culinary School. I still remember the cringe I had and then I remember the chef in the meat class yelling at me about how I am literally butchering the meat 😆 and in the fish class the MIT (manager in training or sous chef) was judging me how I was gagging looking at certain fishes. ⁣ .⁣ .⁣ But then I had a great teacher in my fish class, chef Speckamp, may god rest his soul in peace! Whatever I know about fish and fabrication it is because of him. He was immensely patient and taught me every single thing step by step after every class. ⁣ .⁣ There is one thing you don't know about me is, I am dyslexic and a lefty but forced to be right handed 😅 So a lot of times I get massively confused with tasks like these. So beautiful. Omg, when I went to culinary school, one of the main reasons for me to choose just Pastries was that I was shit scared to handle meats and fish. I always thought, I’ll be chucked out of skool🙈 Lol.. You made the fish look so damn gorgeous ❤️❤️
